We had the opportunity to tour with Angelo in Parma, with 2 close friends and we all had a wonderful time! Just a quick note to tell you how much we thoroughly enjoyed our tour the other day. It was a real treat to watch artisan food producers at work, and  so much better to see small-scale, traditional operations than mass production. As a qualified artisan cheese maker myself I was particularly fascinated to learn the differences between the “grana” method versus the way a hard cheese is typically made. Our guide, Angelo, was absolutely delightful, and his passion for the region and its’ produce was infectious. The only downside is that we bought so much parmigiano, prosciutto, balsamic and wine that we will become as fat as a Duroc boar by the time we’ve finished! Added to the fascinating, insightful and educational tour we enjoyed an excellent lunch, gazed at beautiful scenery resplendent with a myriad of autumn colour on a perfectly warm and sunny day, and made new friends into the bargain. Dear Angelo,
We often remember the time we spent together and so cherish the memories. You might find it amusing that I found a family owned Italian grocery business who import 1st rate Parmesan Reggiano cheese. The owner even showed me the wheels featuring the branded rind. Another major influence from Italy we now experience daily is properly made espresso and cappuccino. It required the purchase of a grinder and espresso machine (made by Gaggia) for which there have been no regrets. Please accept our warm invitation to stay with us if you visit Rochester.
